DANDELION, ITALIAN RED STEM

48 days - The Italian Red Stem Dandelion is not a true dandelion. Although the resemblance is similar, it is actually a member of the chicory family. Italian dandelions are much earlier than other dandelions, and have a more upright growing habit. The flavor is best described as slightly bitter, with a nice peppery edge. The roots of the plant can also be dried, ground and mixed with coffee, yielding a New Orleans favorite beverage. Delicious eaten raw in a salad, but equally tasty sauteed with bacon or in soups.
